Sometimes a little change-up is a good thing, and this is definitely a good thing. And by the way, you could use this on almost steak, but it was amazing on this skirt.

  4. Your explanation of why one should cut against the grain was one of the clearest and most succinct explanations of the matter that I've heard. Nicely done. That stated, I don't care how well you sourced your meat; that marinade still would've benefitted from a healthy pinch of MSG!

  5. NAILED IT!!! i make an almost exact dish at home OFTEN, cause my wife loves it. i would only recommend (for me) more garlic, add sake and mirin to the marinade. green onions MUST HAVE!
