  1. My parents had their 40th wedding anniversary last weekend, and I made this for the main dish for their anniversary dinner. I put the lime and coriander in with the veg instead of the sour cream and added a fourth pepper, and it went over really well! My sister is vegetarian and insisted it was fine with just the peppers and mushrooms and onions (and her husband was really thrilled with the chance to eat steak). Mom, who's almost 70, was talking the other day about how she wished we had taken pictures of the food before we all started eating so that she could show everyone on Facebook the lovely dinner I made for them.

    I've made the pork and apple burgers you featured a while ago for them before, and those were a big hit, too. You've done quite well by us, Mr. Lewis!

  2. This is not very authentic.  Real Mexicans would never add mushrooms or a courgette to their fajitas.     A nice hefty pinch of cumin for the steak rub would also help.

  3. Hi there 🙂 Lovely recipe. Looks fantastic. I will definitely try this at home. I just have one question. How long should I fry my meat on each side? 2 minutes would do if I want it medium rare?

  4. I'd have swapped the frying pan with the vegetables(even though they caramelise) and char grill the steak. You gotta love a char grilled steak

  5. Originally the meat was cow diaphragm, which you may still be able to get in the UK. In the USA, almost all of that (known as "skirt steak) is exported to Japan because a quirk of Japanese import taxes ensures that it can enter Japan at the low tax rate assigned to offal. Result: other cuts are sold in the USA as "outside skirt steak" and those are somewhat expensive, with the real thing (once a second-class meat) even costlier — when available. I hope that this has changed and I'm wrong now… it hadn't last I checked.
