This is a truly epic vegan steak – juicy, succulent, totally delicious. I decided to flambé it – this is of course optional. I suggest serving with my Peppered Cognac Sauce – recipe below.

1 cup soya chunks/TVP (presoak in hot water for 30 mins, rinse & wring out)
4 slices brown bread
½ tsp black pepper
1 tsp salt
1 Tbsp liquid smoke
1 heaped tsp miso – dark or light
4 Tbsp vital wheat gluten
2 tsp beetroot powder
2 tsp mushroom powder
1 Tbsp refined coconut oil
1 Tbsp soya sauce
¼ tsp instant yeast
4 heaped Tbsp plain white flour
1 medium Portobello mushroom, roughly chopped
1 medium oyster mushroom, chopped into 1½” slivers
½ cup red wine
1 Tbsp psyllium husks
Add another 2 Tbsp flour, then leave to rise for 30 mins or so
Extra coconut oil for frying

Peppered Cognac Sauce :
1 heaped tsp miso
¾ cup cashew nuts
1 cup water
½ clove garlic
1 dessert spoon nutritional yeast
1 Tbsp cognac – & extra for flambé
1 tsp crushed pepper (add more if you want it hot)
Process in your blender until rich & creamy. Pour contents into a small saucepan & gently heat.

Anyone from the uk made this, what is soya chunks and where do you get it from? and vial wheat gluten, beetroot powder, mushroom powder, is instant yeast the same as active yeast? psyllium husks? never heard of these, appreciate any help with these, thank you, looks so so nice too, need to make it 🙂 sorry just saw the pull down, ebay here I come 🙂

  4. I'm going to definitely make this, I'm waiting for the soy chunks to be delivered. Please can you tell me what the psyllium powder is for? Also is 'instant yeast' the same as the dry yeast you make bread with?
