👅 RECIPE: Bomb Bean & Bulgar Tacos
1 tablespoon grapeseed oil or coconut oil
2 cloves garlic, minced
1 jalapeño pepper, seeds removed and minced (do 1/2 if you’re sensitive to heat)
2 roma tomatoes, diced (or other fresh tomatoes)… or 1 cup canned diced tomatoes
2 cans of beans (I did black and kidney), drained and rinsed
1 1/2 cup cooked bulgar ( or brown rice or quinoa)
1/2 tablespoon cumin
1/2 tablespoon chili powder
1/2–1 teaspoon salt
cayenne pepper, to taste
1 cup guacamole (my recipe linked below)
1/4 cup fresh cilantro, minced
2 fresh limes, sliced into wedges
6-8 corn tortillas, warmed on the stove or in the microwave
Warm oil in a large skillet on medium heat.
Add the garlic and pepper, and sauté until the pepper begins to soften.
Add the tomatoes, and cook until they’ve softened, and released their juice.
Add the beans and bulgar, followed by the cumin, chili powder, and salt. Stir well, and continue to cook for about 5 minutes.
Season to taste with salt and cayenne pepper.
Serve in the corn tortillas and top with guacamole, fresh cilantro, and a squeeze of lime.
