In this video, April makes a recipe for ground beef Weeknight Tacos. If you ever had those tacos as a kid using the seasoning packets and crispy shells, then you will probably recognize these tacos. This is a grown up version of that recipe, without a packet, so you know exactly what is going into this dinner. It’s quick and easy and the perfect weeknight dinner!

Serves 5-6


2 teaspoons each: Chilil powder, Cumin, Paprika
1 teaspoon each: Oregano, Garlic Powder, Onion Powder, Black pepper
1 1/2 teaspoons Salt
2 tablespoon Cornstarch
2 pounds Ground Beef
1 onion, chopped
1 cup water
Crispy or Soft Taco Shells
Shredded Cheese

For the Guacomole:

2 avocados, chopped
1 tomatoe, seeded and chopped
1 garlic clove, minced
1 tablespoon lime or lemon juice
Pinch of Salt


Heat the taco sheels in the oven according to package directions

Combine all of the seasonings together in a bowl along with the cornstarch.

Brown and break up the beef in a large skillet, adding the onion once the beef is broken up. Cook until the all pink is gone.

Add the seasonings to the beef and the cup of water, stir to combine. Bring the mixture to a low simmer and cover for 5 minutes, uncover and cook for another 5 minutes.

For the guacamole, mash together the avocados, tomatoes, garlic, juice, and salt until slightly chunky, refrigerate until ready to serve.

Serve the tacos ith the guacamole and cheese.

Just a little note on the guacamole… you should add some jalapeno, red onion, cilantro, and a little salt and pepper to make it more authentic. and the shells should be made by either frying corn tortillas or baking them in the oven. NO STORE BOUGHT PREMADE SHELLS!! loved the spice blend though 😉

  3. These tacos look really good. Can't wrap my mind around applesauce in tacos, though. Maybe I'll have to try it just to see if I'm missing something.

  5. Tacos are nostalgic for me too!  Yours look great!  I like to put lettuce, tomatoes, shredded cheese and sour cream as well.  Sometimes I add sliced or chopped olives to the meat mixture and it gives it a great flavor.  Congrats on your new baby!
